Feature Ingredient: Salami
A type of cured meat originating from Southern Europe, salami is an interesting variation of the typical sausage. It is a meat capable of being stored for over a month after being cut, very rare for a meat product I'd say; this characteristic is a result of being completely dried in the curing process. Generally, salami is made out of various types of meats and spices, which are fermented before being stuffed into a casing to be cured. It is a popular in European cuisine and also popular all over the world on cheese platters. Today, the salami will be added as a substitute to salt in the eggs in tomatoes recipe I modified, originally from the recipe book "A Year Full Of Recipes", with ISB number 978-1-4454-8968-1, if anyone is interested.
Recipe: Eggs in Tomatoes
Serves 2
Ingredients:
2 small tomatoes, seeds removed
1 medium egg
1 tsp dried oregano, chopped
1 tsp parmesan, grated
2 slices of bread
1 tbsp butter
20g salami, diced
Pepper
Method:
- Cut a slice from the top of each tomato and remove the seeds and pulp.
- Break an egg into a bowl and spoon equal amounts into each tomato, add the diced salami and sprinkle with oregano, pepper and parmesan.
- Grill for 10-15 minutes or until the eggs are set or to your preference.
- Meanwhile, spread the butter onto both sides of each slice of bread, then season with oregano and salt and pepper. Place onto the same grill for 5-10 minutes or until golden. Grill any remaining salami as well.
- Assemble by putting each tomato on a slice of toast.

All the ingredients needed to make this simple dish.
Remove the insides of the tomato with a spoon and knife.
Crack the egg into a bowl for easy distribution into the tomatoes.
Season the tomatoes well - and don't forget to add the salami pieces!
Cover the bread in butter and oregano.
Grill altogether!
Assemble onto the toast - alternatively you could have a smaller piece of toast or a larger tomato.
The tomatoes can also be served in small serving dishes as an appetiser.
