You might be wondering what this post is going to be about - it's not the norm. After every few weeks or so, I'll be doing a lunch/dinner/food party where I'll be doing a somewhat big cook of my favourite recent recipes that I've been posting. This will just help me get an idea (and give you), if these recipes would work in a larger scale environment - here's what I made:
Insalata caprese skewers
I made this using the same insalata caprese recipe, which you can find here, but instead, I replaced the sliced mozzarella with bocconcini, so that it would match the size of the cherry tomatoes. They tasted great and were BEAUTIFUL (in my opinion); they were very easy to make, present and eat (if I'm honest). Completely practical for serving a lot of guests - you won't even have to buy a lot of ingredients! To make 15 (pictured), I only needed 1 box of cherry tomatoes and 1 small bag of bocconcini.
Potato circles and feta
It was great (of course - what potato dish isn't?); the hot potatoes with the cool feta and fresh parsley made an interesting combination of flavours and textures! If was a tiny bit more difficult to make than the insalata caprese, as it required more steps - but was totally worth it. You can check out photos and the recipe here.
Enoki mushrooms and bacon
This time, instead of grilling the obimaki enoki, I used an actual barbecue; they turned out to be more crispy, although the heat of the barbecue didn't seem to distribute well around the whole bacon section. Nevertheless, they turned out fine and weren't too much of a hassle to make in large quantities. If you prefer a softer version, the recipe can be found here, and if you prefer crispy, then substitute the grill for a barbecue.
Roast veg couscous salad
Super yummy and colourful, also very filling - recipe coming soon! In the meantime, check out this picture. Lots of fun to make and can serve A LOT of people
And of course, another cliffhanger... Spiced chicken skewers
Great for guests who are walking around, and don't really want to be carrying a plate (oh, the dilemma!), but seriously tasty and colourful.
Overall, the lunch went well and was lots of fun to make. I suggest to prepare beforehand (maybe the night before) if you are cooking more than this or would prefer to have it easy the actual day of serving. If not, just make sure to have a clear plan in your head of what you're cooking, its ingredients and the method; this will help with the flow of things, and remember to keep your cool!
