Satay Chicken Stir Fry

Feature Ingredient: Capsicum (Red Bell Pepper)

Capsicum - or more commonly known in the US as Bell Peppers - come in all shapes, sizes and colours! They are commonly eaten raw (as Homer showed in one Simpsons episode) but also cooked in various dishes. They are a species native to the Americas and have been cultivated for thousands of years. Nowadays capsicum is cultivated and grown worldwide; they thrive in sunny conditions with warm and moist soil. The uses of capsicum in cuisine include a variety of dishes; they are blended in gazpacho (a cold soup), mixed in stirfrys, chopped and eaten raw in salads, and simmered in stews. Today we'll be using capsicum in our satay chicken stir fry - not only does it add to the flavour, it brightens up the dish with it's standout red colour! The recipe I used came from the back of the Maggi recipe base - I was also able to locate the recipe online.


Recipe: Satay Chicken Stir Fry

Serves 6

Ingredients:
500g chicken fillet, cubed
1 brown onion, sliced
1/2 red capsicum, sliced
2-3 tbsp peanut butter
1 pkt Maggi satay chicken recipe base, mixed with 3/4 cup of water
1 tbsp vegetable oil

Method:
  1. Start by heating the vegetable oil in a wok, stir fry the chicken until they become brown.
  2. Add in onions and capsicum, continue to stir fry for another 2-3 minutes.
  3. Add the peanut butter into the pan and mix into the other ingredients. Add in the recipe base liquid mixture and stir fry for 2 minutes or until the mixture thickens.
  4. Serve whilst hot with a bed of rice!

Overall a really tasty and simple dish that it really accessible for people who would like to try a dish popular in many South east asian countries. The recipe base seasoned the ingredients well so that it wasn't too sweet or too salty - just perfect! Really delicious with some steamed rice and such a quick meal too - super simple dinner or lunch. I thought it was really interesting that the peanut butter almost acted as thickener - this is really convenient because peanut butter is usually always in my cupboard, whereas searching for potato starch as a thickener can be a bit difficult! Anyways, I hope you give this recipe a try!
