Feature Ingredient: Lettuce
Lettuce comes from the daisy family; it is a vegetable most commonly used in salads, sandwiches, wraps, and even soups! It is rich in vitamin K and vitamin A, however when contaminated, it is a source of bacterial outbreaks such as E. coli and Salmonella. Its English name is derived from its Roman name 'lactuca' and was natively spread all around the world - from the Mediterranean to Siberia! Lettuce was first cultivated in ancient Egypt for the production of oil using its seeds. Today, its leaves have become edible after selective breeding by the ancient Egyptians. There are many types of lettuce - for this recipe we'll be using iceberg lettuce, but other types include: Romaine, Butterhead, Summercrisp and many more.Recipe: Mint Chicken Salad
Serves 6
Ingredients:
8 leaves of Iceberg lettuce, rinsed and roughly chopped
2 cucumbers, sliced in moon shapes
1 carrot, peeled into thin slivers
2 tomatoes, diced
1/2 cup of pickles (optional)
1 roast chicken, pulled
1/4 cup of mint leaves
Balsamic dressing
Method:
- Prepare all the fresh salad ingredients - rinse, slice and combine into a large salad bowl.
- Pull the chicken into smaller pieces and add into the bowl. Then add in the mint and pickles.
- Dress the salad with balsamic vinegar. Mix well before serving.

Add the pickles
Add the chicken, dress with balsamic dressing and season with salt and pepper.

This recipe was not to hard to whip together; it's perfect for when you're craving something fresh and filling. The pickles and balsamic also give the salad a slight tanginess, which work really well in this salad! I would serve this salad as a side for dinner or as a main for lunch - either way, it's delicious! The mint also adds a certain refreshing taste to the salad and is almost reminiscent of asian salads that are full of herbs. I hope you give this tasty recipe a try!
