Nutella Coconut Ice Cream

Feature Ingredient: Nutella (Hazelnut spread)

Nutella is a sweet hazelnut chocolate spread manufactured by the Italian company 'Ferrero'. The spread went through many years of development to become the product it is today; the first jar of Nutella that left the Ferrero factory (in Alba, Piedmont) was on the 20th of April 1964. It has since gained instant and rapid global success. Today, with its international recognition, Ferrero consumes approx. 25% of the world's global hazelnut supply! This isn't a big surprise given that the main ingredients in the famous spread include: hazelnut, cocoa solids, skimmed milk, sugar and palm oil. To add to the spread's success, World Nutella Day is celebrated on the 5th of February. Another interesting fact is that 1 jar of Nutella is sold every 2.5 seconds! Although Nutella is renown for being a delicious morning spread, I'll be using it today to recreate Nutella coconut ice cream, with the recipe coming from here.

Recipe: Nutella Coconut Ice Cream

Serves 4

Ingredients:
1/2 cup of Nutella
1/4 cup condensed milk
1/2 cup coconut cream
1/2 cup milk
Dash of vanilla extract
Pinch of salt

Method:
  1. Combine the milk, condensed milk, coconut cream, vanilla extract, salt, and (of course) the Nutella, in a blender. 
  2. Blend on medium speed until the mixture is smooth.
  3. Pour the mixture into a popsicle mould (to make popsicles) or into a tray lined with no stick parchment (to make ice cream slices). Place into the freezer overnight.
  4. For the popsicle mould, run warm water along the outside of the mould to help loosen the popsicles. 
  5. For the ice cream slice, simply pull the sides of the parchment paper to help lift the ice cream out of the tray. Slice into smaller pieces using a warmed knife.
  6. Serve whilst cold, alone or with additional touches (e.g. drizzled chocolate, whipped cream etc.)

Combine all the ingredients - yes, it will look rather terrible but it'll look much better later on.


Blend until smooth.



Fill your popsicle moulds or tray with the mixture.



Freeze overnight and you'll find yourself with some super delicious frosty popsicles!


Mmmmm...


Slice the ice cream into smaller pieces and serve alone or with drizzled chocolate.

Wow wow wow! This recipe is so creamy an delicious that I'm still surprised you can make these at home; they're pretty easy too! Unlike what I expected, the ice cream did not become crystallised/icy after being freezed - the coconut cream helped the ice cream to, well, stay creamy. What I really like about this recipe is just how versatile it is in that you can use it to make popsicles, ice cream slices and many more variations. In terms of flavours - what does taste like? Coconutty, chocolatey, creamy and cold. Absolutely perfect for a hot day, or as I like best, for a cold day! You have to try this out - words cannot do it justice!
